During college and for a few years after I didn’t really eat breakfast. I didn’t really like cereal, felt pressed for time to get out the door and lacked creativity. I often found myself starving by lunch and with very little energy. After I started working as a Wellness Coordinator, I got in my breakfast groove and found that eating breakfast made me feel a ton better later in the morning with improved energy and I didn’t have the starved feeling at lunch. I also found that I had more energy for a morning workout. The only problem… I ate the same peanut butter toast and piece of fruit every morning and I wanted to change it up.
I know there are a lot of diets suggesting that you shouldn’t eat breakfast, but there is also a plethora of studies supporting eating a nutritious breakfast. The American Heart Association issued a scientific opinion in 2017 related to meal timing, frequency and the implications for cardiovascular disease prevention related to eating breakfast and found that those who ate breakfast were more likely to have adequate intake of vitamins and minerals than those who didn’t east breakfast. In addition, the opinion paper stated, those who ate a daily breakfast may decrease the rise of adverse effects related to glucose and insulin metabolism. Fredrik Karpe, professor of metabolic medicine at Oxford Centre for Diabetes, Endocrinology and Metabolism states that breakfast is the key to jump starting metabolism.
Now that I am a mom and work outside the home, breakfast during the work week has been taken to a whole new level, trying to feed not only myself but my family and time is even more precious to get out the door.
